Enjoying Food: Angel Food Protein Cake

8/15/2014

Ever have the urge to eat an ENTIRE cake? Well now you can.. The macros on this are freaking insane. This is the highest protein, lowest fat, and lowest carb cake I have ever seen. And it tastes SO GOOD!! Believe me have tasted some nasty protein "cakes" in my day, so I know what's legit. I wish I could take credit for this recipe, but it is a modified Super Sisters recipe by Ashley Crandall (IG@ashashfit) who gave me permission to blog it (thanks Ashley!).

[Edit 12/2/2015 - I made a YouTube video demonstrating how to make this recipe]
ANGEL FOOD PROTEIN CAKE
184 kcal -- 1F / 3C / 38P (for ENTIRE cake)
Picture
Ingredients:
- 7 room temp egg whites (use white from real eggs, not carton)
- 17g whey (I used chocolate chip cookie dough cellucor)
- 1 tsp cream of tartar
- 1 tsp vanilla or any extract you want (I used butter extract :P)
- Stevia to taste
Picture
Directions:
1. Make sure eggs are at room temp. Preheat oven to 350 degrees.
2. Separate egg whites, and place all ingredients (EXCEPT for whey) in mixing bowl.
3. Mix on highest speed (I use a kitchen aid) for a few minutes until high peaks. I use the whisk beater attachment.
4. Sprinkle whey on top. Fold in gently and carefully. Do NOT over mix.
5. Place in sprayed round pan and then in oven for 20 minutes. When you take it out, let cool for a few minutes.

Place whatever toppings you'd like! Strawberries and whip cream, etc! I mixed dark chocolate dreams with some lite hershey's syrup and microwaved it for a few seconds. Pure bliss. *_* As you can see in this pic, the cake is massive and the macros (1F/3C/38P) are for the ENTIRE cake.

Now you can have your cake and eat it too. ;)

Ive been trying to eat more right now my stats are 1500cal 33-36 fat 180-197 carbs and I try to atleast get over 100g protein. Somedays are different then others so those stats are never spot on everyday. Ive been really bloated the past 3 days so it makes me not wanna eat as much as I have to. I did IIFYM calculator and they gave me for fat loss 1416 calories, 41 fat, 156 carbs and 104 protein. The carbs seem low, do you know why?

Hey Justice! The IIFYM/macro calculators cannot account for your specific individual metabolism. They just estimate a ballpark figure. Shoot me an email and I'd be so happy to help you figure out how to get started manipulating your macros for your goals. :) themacroexperimentcait@gmail.com <3

Might you give me an estimate on where to start with the Stevia? I'm new to cooking with it, and am not sure...a teaspoon? A quarter cup? I'm so excited to make it, thank you! :D

I have such a hard time finding out which setting on my oven is the correct. ): Angel food never bakes right (it's always wet fluff in the middle, and burnt crisp).

Awe, weird!! I'd say maybe try it a little lower temp, and maybe use 2 pans (divide recipe into 2 pans) to get more surface area… let me know if that works a little better!

Hello! I watched your IIFYM tip video and came over to your blog! Would there be a substitute for the cream of tarter? Maybe some greek yogurt? Thanks!

Cait link
6/25/2015 05:55:24 am

I don't think you can sub for cream of tarter… buuuut if you try it, and find something that works PLEASE let me know!! :D

Might make this as my birthday cake! What happens if you use carton eggwhites instead of real egg whites? I dont know what to do with 7 yolks leftover!

Cait link
9/10/2015 04:12:35 am

Yeah. I'm not sure why but it just doesn't work. I just throw the yolks away I know that's so sad :/:/!!

Anna

Ive made this with carton egg whites and it worked pretty well! Btw i used xanthan gum instead of cream of tartar. Came out just fine. My cake was in the oven for a bit longer (24 mins)

Am I the only one that this totally failed for? I got a really flat thick and dense funky tasting egg white pancake. Hahah sooooo disappointed and I don't understand what I did wrong!!!

Cait link
9/10/2015 04:16:29 am

Hmmmm. Let's try and see what could have gone wrong?

Did you do the following:
- use cream of tartar (make sure not past expiration date)
- use actual egg whites (NOT carton egg whites)
- let eggs sit out until room temp before cracking
- not overmix.. You need to just lightly *FOLD* proton powder in a few times. It won't be fully mixed.
- use an electric mixer

… did you do all of those things?

Hello, what happens if you use cartoon egg whites? It won't work?? I barely ever buy real eggs and like one of the others commented I wouldn't know what to do with 7 yolks and seems like a waste to just throw them out!

Cait link
9/10/2015 04:18:05 am

Yeah.. I mean you could save them and eat them later I guess! I do throw them out, but I guess that's the price I am willing to pay for eating an entire cake with amazing macros! It's worth it to me at least :P I just heard it does not work with carton egg whites btw, you can feel free to try and let me know what happens!

Ellie
9/6/2015 10:14:55 am

Would really love to know why you can't use carton egg whites!

Ellie
9/6/2015 10:25:09 am

I've just found a link that said carton egg whites are heated during pasteurisation which means they aren't recommended for meringue or angel food cake so just thought I'd share for the other commenters above me!
